Summer seems to have come early – and there is no better accompaniment than a cooling cocktail. These frozen mojitos are like grown-up slushies and make for a refreshing drink to be enjoyed outdoors. Whip them to enjoy on a mellow evening as the perfect sundowner. Alternatively swap them for your Pret smoothie at lunchtime. While the balmy days makes everyone feel like it is a holiday, no one will notice the difference.
Ingredients (makes 4 cocktails)
8 oz sugar
8 oz water
4 oz fresh lime juice, about 4 to 6 limes
A handful of fresh mint leaves
2 limes, zested
4 oz light rum
A bag of crushed ice
Mint sprigs and lime wedges, for garnish
In a saucepan over medium heat, add the sugar and water. Cook for about 5 minutes, stirring often, until the sugar is dissolved and the syrup is clear. Set aside to cool.
Put the sugar syrup, lime juice, mint leaves, lime zest, and rum into a blender and blend until smooth. Add the ice and blend until slushy. Spoon into glasses. Garnish with a sprig of mint and a lime slice.
