World gin day: the perfect Tom Collins

World Gin Day takes place this Saturday so you’d better whip up a token G&T at the very least. Events kick off tomorrow in Newcastle with their three day festival of gin, the largest celebration of the spirit in the UK. In London you can try your hand at combining gin and speed dating, while across the globe there are events in Cyprus and Melbourne.

But if World Gin Day is not coming to a bar near you, whip up a classic Tom Collins cocktail. Purists only make it with Old Tom Gin, referring to the Tom in the name. Of course, you could make things easier for yourself but simply mixing gin and lemonade, but that’s not the done thing, old chap.

Tom Collins

Ingredients (makes 1)

2 ounces London dry gin

5g superfine sugar

1/2 ounce lemon juice

Club soda


Combine the ingredients in a Collins glass (similar to a highball glass but taller and narrower) three-quarters full of cracked ice. Stir briefly, top with club soda, garnish with lemon circle and serve with stirring rod. Alternatively, some like to garnish their drink with a maraschino cherry.
