There are some drinks so unique that they defy categorisation and fall in a class of their own. Innovation is key to specialty drinks, of which Pimm's, the celebrated ‘Cup', is the best known. Pimm's Classic, served with lemonade and lashings of fruit, is the most famous Pimm's serve, and a summer favourite; a Pimm's Royale benefits from the luxury of champagne; while the spicy taste of Pimm's mixes well with both lemonade and ginger ale. The story of Pimm's begins in 1823, when James Pimm opened a London oyster bar, which would become famous for its excellent house ‘cup’, a blend of gin and flavourings including juniper that we know today as Pimm's No.1 Cup. Constant innovation led to more Cups, each based on a different spirit. Today Pimm's follows the seasons, with Pimm's No.1 Cup for summer and Pimm's Winter, a brandy-based, spicier blend for winter, as well as new Pimm’s Blackberry and Elderflower that brings a taste of late summer with its floral, fruity blend. Then there’s a newer innovation of flavoured drinks that go by the name of Jeremiah Weed. These brews originate from Jeremiah Weed bourbon liquor. A unique drink, Jeremiah Weed is based on fruit liquor with flavourings such as bourbon and root beer. Third, there’s Parrot Bay, a range of tropically flavoured ready-to-drink frozen cocktails from the Captain Morgan family. Lighter and sweeter than many types of rum, they work well mixed with fruit juices or in Breezes. The latest innovation in the Parrot Bay family is ‘freeze and squeeze’ frozen cocktails with flavours that include Berry Daiquiri, Citrus Daiquiri, Mojito and Piña Colada.
